You love eating sweets but you hate standing in the kitchen, baking for twelve hours? Well, here is the solution! ;) These coconut kisses are super-easy and really fast to make. And by the way, totally delicious!
What you need:
4 1/2 (small) cups shredded coconut
1 cup gluten-free flour (I used a mixture of coconut flour, corn flour, rice flour and buckwheat flour)
8 tsp coconut oil, melted
1 cup soy milk (I used vanilla flavour)
4 tsp sugar (unrefined)
Vegan baking chocolate + some coconut oil
How to make it:
1. Put all the ingredients (except the chocolate) in a huge mixing bowl and stir until well combined. Add more wet or dry ingredients if needed – the dough should be well shapeable.
2. Now form small balls and put them on a baking sheet with baking paper. I used a cake pop mold to get an extra nice shape ;)
3. Bake your coconut kisses at 180°C for about 10 minutes. In the meantime heat the chocolate and the coconut oil (using water bath) until totally liquid.
4. Remove the coconut kisses from your mold, drizzle them with chocolate, let them cool and enjoy!
