Not just good but delicious: Learn how to make these wonderful raw-vegan peanut butter cookies with chocolate nicecream, entirely gluten-free and without refined sugar. The best thing: If you do it right you won’t need longer than 10 minutes.
Raw-vegan peanut butter cookies with chocolate nicecream |
raw-vegan, gluten-free, sugar-free
What you need:
For the peanut butter cookies:
1 cup soft, pitted dates, soaked in water for about 20 minutes
1 cup coconut flour
1/2 cup peanut butter, sugar-free
1/2 tsp ginger powder
For the chocolate nicecream:
2 frozen bananas, cut in pieces
1 tbsp raw cacao powder, sugar-free
1/8-1/4 tsp genuine vanilla
How to make it:
- Put all the ingredients for the cookies in a high speed blender and blend until you have a homogeneous mixture. It should be soft and shapeable. If it is too dry, add some water and blend again.
- As soon as you have the right texture, start to form cookies out of your batter. Use a fork to make them flat or try to do it entirely with your clean hands. Balls will also taste delicious but filling them with ice cream won’t be that easy I believe ;)
- Also for the nicecream you have to put all the ingredients in a blender. Blend until smooth. If your blender doesn’t like mixing without liquid, add some water or plant-based milk such as rice milk or almond milk.
- You can eat your cookies while dipping them into the ice cream or you form sandwiches out of two cookies and some nicecream. Both will turn out delicious, promise! By the way, this recipe is not only raw and vegan but also gluten-free and without sugar of all kind (except the sugar in the fruits). Enjoy this guilt-free goodness!
PS: If you accidentally make too much ice cream, don’t worry: It will be also great as a chocolate smoothie.
